Kibingo washing station is located in Kayanza commune in Northern Burundi, it serves 1739 registered coffee growers who are spread over 18 hills in the area and produce 200-300 kilos of cherry annually. The washing station is equipped with 10 fermentation tanks, 2 soaking tanks and a drying field with 165 drying tables and 4 pre drying tables which can process around 750,000kg of cherry per day. Cherries are wet processed under constant supervision, they are floated in small buckets then sorted by hand to remove all damaged, under ripe and over ripe cherries before being pulped within 6 hours of delivery. During pulping the cherry is separated in high and low grade by density before being fermented in water for 10-12 hours. Station workers trample the parchment for 30 minutes in the fermentation tank, this helps to remove the mucilage. Following this coffee is run through the washing and grading canals before being laid to rest on raised beds.
