La Laguna Siberia Reserve is in the North-Eastern part of Cauca Department in between the two municipalities Caldono & Piendamó where the temperature averages 20-24°.
Manantial is a small producers association that represents just 12 families and each family looks after their own small farm. The coffee is washed then fermented for around 18 hours dependant on heat and lastly dried for 15-25 days before grouping together the entire harvest to be sold under the same name. The beans are grown almost entirely under shade amongst panela, plantains, pineapples, yucca and lemons which helps towards the sweetness of the coffee.
The farmers deliver their parchment to the local collection warehouse where it is weighed and recorded before being received into the warehouse in Popayan to be cupped and then dry milled for export at a mill before being trucked to the port of Buenaventura.
