La Nueva Era coffee is sourced from Finca Tololoche, a family-owned farm which overlooks the cooperative in Jumaytepeque. The farm is run by a three-generation family: Jamie Sanchez, his father Don Fernando and son Fernando. The 50-hectare farm is located on a mountain with rich potassium soil; it involves all its 32 producers in any decision-making processes from education to coffee production. Each member receives an advance payment for harvesting then a secondary payment when the coffee arrives at the warehouse. Processed naturally, the drying time can vary with the altitude, it usually takes 10 - 17 days which showcases the cooperatives dedication to the quality and traditional methods before it reaches the Fedecocaguas dry mill in Palin. The cherries are harvested then briefly washed and dried in concrete yards. For the first few days they lie without turning to develop the sweetness and fermenting notes, the cherries are then rotated periodically to achieve uniform drying and the desired final moisture.
