This month’s coffee of the month is particularly special for us as it is from a region we visited in July this year. This coffee was processed at Fazenda Cachoeira da Grama ran by the Carvalho Dias’s family for over 130 years. George who runs the farm was extremely hospitable and showed us around this beautiful area. Named after the waterfall within the farm (Cachoeira) and (da grama) the area known for extremely high quality coffee. Nearby farms include Santa Alina, Receiro & Barreiro.
Fazenda Cachoeira da Grama spans over 400 hectares, 106 of which are used for eucalyptus and 95-96 Coffee. 50% of the land is kept for legal reserve, protecting wildlife and native plants. This farm processes natural, pulped natural and washed coffees.
Within the Mogiana region, Vale De Grama sits between the border of Sao Paulo and Minas Gerais – the region is particularly notable as the birthplace of the Brazilian Speciality Coffee Association (BSCA) founded in 1991. The valley was once owned by Brazilian matriarch Dona Mathilde and has since evolved into a collection of 6 farms which home both established estates and small-scale producers.
The area is praised for its ideal mild climate and altitude, with warm days and cool nights it gives the bean a slow maturation and helps with the beans flavouring.
Most Brazilian coffee is grown on large farms equipped for mechanical harvesting and processing; the relatively flat landscape has led most farms to opt for this method. The coffee is mechanically picked and then sorted according to the ripeness and density; it is then taken to the patios where it’s dried for 7-10 days
