Thunguri washing station is part of the Kibirigwi farmers cooperative society located in Kenyas central highlands, the group has been growing coffee since 1953 - the region is perfect for developing flavours. The combination of fertile soil, seasonal rainfall and high altitude provide the ideal climate for the ripe fruit flavours. The station serves over 1000 farmers, most of them manage plots of 200-300 trees along subsistence crops such as maize and bananas. Raised drying beds reduce soil contact and improve air flow, while shade structures help regulate drying times minimising defects and reducing energy use. Farmers receive training in soil health, pruning and integrated pest management which reduces reliance on chemical inputs. Farmers selectively hand pick ripe cherries that are delivered for wet milling the same day, the parchment is then fermented, washed and dried. Dry parchment is milled and bagged at Sangana coffee mills and then transported to the dry mill warehouses.
