Prepared with steaming to minimise oxidisation and fermentation, this produces a milder lighter tea with typically less caffeine.
All Teas are derived from the same leaves - the difference in colour, aroma and flavour arises from the ways in which it is processed. Leaves can be withered, dried, oxidised and fired depending on the desired tea type. Green tea leaves are not oxidised at all, they are immediately dried after harvest through pan frying or steaming. The leaves are then rolled and dried again in a process that can sometimes occur several times.
