Fazenda Aracaçu is a Brazilian farm known for producing high quality beans, located in the Mantiqueira region. The farm focuses on sustainable agricultural practices and innovations in processing which helps to improve coffee quality and protect the environment. These natural processed coffee beans come from the Chaves de Brito family farm in Tres Pontas, Minas Gerais, the family has been farming coffee for over a century and are now run by the fifth generations who oversee the solar powered programme. Carmen leads the farm and is focused on developing the quality and expanding the range of coffees by planting varietals, new processes and looking into new ways of blending. The coffee on the farm is harvested by varietal and brought to the patios and mechanical driers for drying after the initial cleaning. The coffee never reaches above 40°C as this is critical in maintaining cellular viability. Once dried the cherry is hulled and rested in wood lined silos where its kept very dark, cool and music is played while it rests. Some roasters work directly with the farm which highlights the focus on strong relationships.
