Indonesia Java Blawan is from the Ijen Plateau in the East Java Island. These state owned farms are surrounded by volcanoes and forests which help produce the rich soil, there are around 300 hectares of land that is used for cultivation which dates back to the Dutch Colonial times. The processing method is very unique to Indonesia, it combines elements of washed and natural processes and involves hulling the parchment of the bean at roughly 50% moisture level verses the 10/12% thats most commonly used elsewhere. The process has a significant impact on flavour due to the fermentation process of approximately 36 hours. After drying, the beans are carefully hand sorted leading to a very consistent and clean profile.
