Java Kayumas is sourced from family-owned farms in the villages of Curah Tatal and Kayumas. Based in the East Javan regency of Situbondo the members average 2ha each which is around 1500 trees, in total the cooperative covers nearly 400 hectares. With the help of fairtrade premiums, agroforestry practices have been taught – these provide the knowledge on irrigation systems, landslide prevention, planting distances between trees and biodiversity protection. Training and workshops are held to encourage younger members of the area into coffee farming and rebalancing gender inequalities. Typically producing 5-6 tonnes of cherry per hectare, smallholders deliver to one of the three centralised processing centres belonging to the cooperative. The beans are cleaned and sorted before they undergo a fermentation stage in tile lined tanks, raised beds are used for maximum airflow and quick drying with tarpaulins spread out for the final drying stages, Cherries are dried to export levels at the exported milling facility in Indokom where the skin and parchment are removed.
