Zawadi, a Kiswahili word for present or gift. It is sourced from the mills within the central province in Kenya, a blend of carefully selected peaberry beans from the Kamandi and Ndia-ini coffee factories. Ndia-ini uses fresh water from the Gikira river for processing, the proximity of the river to the factory is what gives it its name which translates to ‘river ponds’. Only a small percentage of beans are grown as peaberries, this unique type is created when only one seed inside the berry germinates and grows into a single oval bean rather than two flat faced sides. The percentage of peaberry mutation is dependant on a higher heat and a lower rainfall. Once the coffee has been picked and processed at the wet mills, it is then collated and taken to a dry mill, the beans are then graded, hulled and bagged for shipping. Once the beans have been graded by density they are fermented, washed and soaked, this four-day process helps amino acids to develop and enhance the flavour.
