Hi Everyone,

We’re making a change to how we send your orders. After working with Royal Mail for many years, we’ve decided to move our postage to DPD.

We didn’t take this decision lightly. Over recent months we’ve experienced a significant number of lost packages. Even when packages did arrive, delivery times were very inconsistent.

By moving to DPD, we can now offer guaranteed next working day delivery with precise one-hour delivery windows, along with real-time tracking. This means you’ll always know exactly when your coffee is arriving.

We want to be upfront: this change may mean a small increase in postage for some packages. Reliable tracked delivery does come at a slightly higher cost. However, we’re pleased to confirm that we’re keeping our free shipping on all orders over £80, so larger orders won’t be affected.

Thank you for your understanding as we make this change. We’re committed to getting every bag of Pumphreys coffee to you safely and without the worry of it going missing.

If you have any questions about your next order or how this affects delivery, please just get in touch — we’re always happy to help.

How to Store Coffee Beans for Maximum Freshness

If you're serious about your coffee, proper storage is key to maintaining the rich flavours of your beans. At Pumphreys Coffee, we believe every cup should taste as fresh as the first, so here are a few tips to help you store your coffee beans the right way.

1. Keep It Airtight

Air exposure is the enemy of fresh coffee. To preserve your beans flavour, always store them in an airtight container. Choose a container with a one-way valve that allows carbon dioxide to escape without letting oxygen in.

2. Avoid Heat, Light, and Moisture

Coffee beans are highly sensitive to their environment, and exposure to heat, light, or moisture can degrade their quality over time. Here’s how each factor affects your beans and how to protect them:

- Heat: Excessive heat causes coffee beans to age prematurely. When exposed to high temperatures, the natural oils in the beans can start to break down, leading to a loss of flavour and aroma. To prevent this, store your beans in a cool area of your kitchen, away from appliances like ovens, stoves, or microwaves that emit heat. A cupboard or pantry is ideal for keeping your beans at a stable, room temperature.

- Light: Direct sunlight can also damage coffee beans by causing them to oxidize faster, which reduces their freshness and alters their taste. Sunlight and artificial light can penetrate clear or lightly tinted containers, so it’s best to store your coffee in an opaque, airtight container that blocks out light completely.

- Moisture: Moisture is particularly harmful to coffee beans because it accelerates the staling process and can lead to mould growth. Many people mistakenly believe that storing coffee beans in the fridge or freezer will extend their freshness, but this can actually introduce condensation, which damages the beans. Instead, always store your beans in a dry, cool place to avoid any moisture exposure.

3. Buy Just Enough

For the best taste, buy coffee in small quantities that will last you a few weeks. Pumphreys Coffee offers fresh roasts in various sizes so you can always enjoy your coffee at peak freshness without storing large amounts for too long.

4.

4. Don’t Grind Until You’re Ready

Grinding coffee accelerates its exposure to air. For the best flavour, grind your beans right before brewing.

When it comes to brewing exceptional coffee at home, the freshness of your grind can make all the difference. If you’re serious about getting the best flavour from your coffee beans, choosing the right grinder is essential. But with so many options out there, it can be hard to know where to start. The two most common types of grinders are blade and burr grinders, and each has its own set of advantages and disadvantages. In this post, we’ll help you understand the differences and figure out which grinder is the best fit for your needs.

Blade Grinders: Affordable and Accessible

Blade grinders are the more common and budget-friendly option, often used by beginners. These grinders use a fast, spinning blade to chop up the beans, similar to how a blender works.

Pros:

Affordability: Blade grinders are generally much less expensive than burr grinders, making them a great starting point for those new to home brewing.

Compact and Easy to Use: Most blade grinders are small and require just the press of a button to operate. They’re convenient and perfect for those who want something quick and easy.

Cons:

Inconsistent Grind: The biggest drawback of blade grinders is their inability to produce a consistent grind size. You’ll often end up with a mix of fine powder and large chunks, which can lead to uneven extraction and a less-than-perfect cup.

Heat Generation: Because the blades spin so quickly, they generate heat, which can affect the flavor of the coffee beans by slightly “cooking” them as they’re ground.

Burr Grinders: Precision and Consistency

For those looking to up their coffee game, burr grinders are the go-to choice. Instead of chopping the beans, burr grinders crush them between two revolving burrs. This results in a much more consistent grind size, which is crucial for a balanced extraction and flavour.

Pros:

Consistent Grind: Burr grinders offer unparalleled consistency. Whether you need a fine grind for espresso or a coarse grind for French press, burr grinders ensure uniformity, making for a much better brew.

Adjustable Settings: Most burr grinders allow you to adjust the grind size easily, giving you control over the coarseness or fineness of the coffee based on your brewing method.

Preserves Flavour: Because burr grinders operate at a slower speed, they generate less heat, preserving the coffee’s natural oils and ensuring a more aromatic, flavourful cup.

Cons:

Cost: Burr grinders tend to be more expensive than blade grinders. However, if you’re serious about coffee, the investment is well worth it for the improved taste and consistency.

Size and Maintenance: Burr grinders are often bulkier than their blade counterparts, and they require regular cleaning to keep them in top working condition.

Which Grinder is Right for You?

If you’re just starting out and want something affordable and easy to use, a blade grinder may be the right choice for you. It’s a good option for those who aren’t ready to invest heavily but still want the convenience of freshly ground beans.

On the other hand, if you’re looking to invest in your home coffee set up and want to achieve the best possible flavour, a burr grinder is the way to go.

Nestled in the heart of Brazil's Cerrado region, Daterra is more than just a name on a coffee label—it’s a beacon of innovation and sustainability in the world of specialty coffee. Known for producing some of the finest coffees in the world, Daterra has earned a reputation for quality that reflects its unique approach to farming and its ideal growing conditions. If you’ve tried a coffee in store with us, you’re sure to have tried Daterra Sunrise which is our house espresso. But what exactly makes coffee from this region so special?

Growing Conditions

Daterra is located in Minas Gerais, a region renowned for its coffee-friendly climate. The area benefits from a high altitude of approximately 1,150 meters (3,770 feet) above sea level. Coffee grown at this height take longer to develop, leading to a denser bean with a more complex body. This is evident in the flavour profiles of many Brazilian coffee beans. The Minas Gerais region has distinct rainy and dry seasons, with the former being crucial for the growth and development of the coffee plants, while the latter coincides with the coffee harvest. This helps in processing the coffee cherries, ensuring they are not overly exposed to moisture. The rich, red soil of the Cerrado region is also packed with nutrients such as iron and potassium, this type of soil provides the necessary minerals and drainage for the coffee plants, contributing to the flavour overall.

To learn more about how taste changes region to region check out our recent blog post on “The Art and Science of Coffee Tasting: A Journey Through Flavour Profiles”.

Sustainability

What truly sets Daterra apart is its commitment to innovation and being eco-friendly. Through advanced agroforestry systems, they integrate trees with coffee crops, capturing significant amounts of carbon. Additionally, they use regenerative farming techniques, such as composting organic matter and minimising chemical inputs, which enhance soil carbon storage. By carefully managing water, energy, and waste, production of Brazil Daterra coffee reduces its carbon footprint further, ultimately offsetting its emissions and becoming one of the first carbon-negative coffee farms in the world.

Flavour Profile

Daterra coffee is celebrated for its distinctive flavour profile.

As the summer months heat up, there’s no better way to enjoy your coffee than with a smooth, refreshing cold brew. Unlike iced coffee, which is simply brewed hot and then chilled, cold brew is steeped in cold water over an extended period, resulting in a naturally sweet and less acidic flavour that’s perfect for warm days. A favourite in our Grainger Market store to make seasonally, and easy to make at home.

What Makes Cold Brew So Special?

At Pumphrey's Coffee, we believe in bringing out the best in every bean, and cold brew is another exciting way to highlight the rich, nuanced taste of our carefully selected coffee. Cold brew coffee extracts different flavours and properties compared to hot brew due to the lower temperature, which slows the solubility and extraction of specific compounds like acids, oils, and aromatic molecules. This results in a smoother, less acidic, and sometimes sweeter coffee with muted aromas and a lighter body, as fewer acids and aromatic compounds are extracted. The slower extraction in cold brew also reduces oxidation, preserving a fresher and more stable taste over time.

Whether you prefer it black, with a splash of milk, or even as the base for a coffee cocktail, cold brew offers endless possibilities. It is a forgiving method for brewing at home and it's able to stay fresher for longer (Store up for up to a week refrigerated). Read 'What are the different methods of manual brewing coffee' for more information.

Why Colombian Coffee is Perfect for Cold Brew

When it comes to choosing the right beans for cold brew, Colombian coffee is a standout option. Known for its well-balanced flavour profile, Colombian coffee typically features bright acidity, smooth body, and rich notes of caramel, nuts, and citrus. These characteristics make it an ideal choice for cold brew, as the slow extraction process enhances the coffee’s natural sweetness and mellows its acidity, resulting in a smooth, flavourful cup that’s incredibly refreshing.

Our Colombian Medellin, in particular, shines in cold brew. The extended steeping process accentuates its subtle fruity undertones and nutty finish, offering a complex yet approachable taste that’s perfect for sipping over ice on a warm day.

How to Make Cold Brew at Home with Pumphrey’s Coffee

Making cold brew at home is easier than you might think, and with our top-quality beans, you’ll be sipping a café-quality beverage in no time.

When you taste a cup of coffee, you’re experiencing the culmination of a journey that began in distant coffee farms across the globe. Much like fine wine, the flavour of coffee is deeply influenced by its terroir—the unique combination of geography, climate, and soil that shapes every bean’s character.

At Pumphreys Coffee, we believe that understanding terroir is key to appreciating the rich diversity of coffee flavours. By taking our cupping courses you can better understand the journey your coffee has taken and why it tastes the way it does.

What is Terroir?

Terroir is a French term that translates to “land,” but in the context of coffee, it refers to the environmental factors that affect the beans during their growth. Altitude, soil composition, temperature, rainfall, and even the surrounding flora all contribute to the unique characteristics of coffee from different regions. For instance, beans grown at high altitudes tend to develop more complex and vibrant flavours due to slower maturation, while those from lower altitudes might have a more robust and earthy profile.

How Terroir Shapes Flavour

Take our Ethiopian Yirgacheffe. This coffee is famous for its bright, floral notes and a distinct hint of blueberry. These flavours aren’t added during roasting—they’re a direct result of the beans’ terroir. Grown at high elevations in the Yirgacheffe region, where the soil is rich in minerals and the climate is cool and misty, the beans develop a vibrant acidity and fruity complexity that are hallmarks of Ethiopian coffee.

Contrast this with a cup of Sumatra Mandheling, known for its deep, earthy tones and full body. The beans from Sumatra are grown in lower-altitude, volcanic soils that are rich and loamy. The humid, tropical climate and traditional wet-hulling processing method contribute to the coffee’s syrupy texture and unique flavours of tobacco and spices. It's worth mentioning that humidity also plays a vital role in shaping the flavour of coffee. In regions with high humidity, such as Indonesia or Sumatra, the moist air impacts both the growth of the coffee plant and the post-harvest processing methods. Read ‘What is the best Indonesian region for coffee?’ for more insights.

Sumatran coffees, for instance, are often processed using a unique wet-hulling method, partially due to the region's high humidity levels. This method, combined with the humid, tropical climate, gives Sumatran beans their characteristic earthy, spicy flavours with a rich, syrupy body. The humidity not only influences the beans maturation on the plant but also during drying, where the beans retain more moisture, resulting in deeper, more intense flavours.

Generally, coffees from drier regions, such as certain parts of East Africa or Central America, often undergo sun-drying, which can enhance the beans’ acidity and highlight bright, fruity flavours. The lower humidity helps to preserve the delicate floral and citrus notes that are prized in these coffees.

The Tasting Experience

When you participate in a coffee tasting—or “cupping,” as it’s known in the industry—you’re invited to explore these terroir-driven differences with all your senses. Start by inhaling the aroma of the freshly ground beans. Is it floral, fruity, or maybe nutty? Next, take a sip and let the coffee roll over your palate. Pay attention to the initial flavours, the middle notes, and the finish.

Each phase offers insights into the coffee’s origin and the environment in which it was grown. For example, the bright acidity you taste in a Kenyan AA coffee is often attributed to the region’s high altitude and volcanic soil, which encourage the development of complex fruity flavours like blackcurrant and grapefruit. In contrast, the smooth, chocolatey finish of a Brazilian Santos coffee reflects the lower-altitude, sun-drenched conditions that allow the beans to develop a more mellow, balanced flavour.

Exploring Coffee Terroir at Pumphreys

At Pumphreys Coffee, we’re committed to bringing you the best of the world’s coffee terroirs. Each bean we source is a product of its unique environment, and we take great care to preserve these distinct characteristics through careful roasting and brewing.

Understanding the impact of terroir allows you to connect more deeply with the coffee in your cup. It’s not just about enjoying a drink—it’s about savouring the story of the land, climate, and care that went into producing each bean. At Pumphreys Coffee, we’re here to help you discover and celebrate the world’s most remarkable coffee flavours, one cup at a time.

To learn more about how geography influences the flavour undertones in coffee, book a Cupping Experience in our Blaydon Roastery and take a tour with the help of our experienced staff.

For some home brewers, an espresso machine may be overkill for the kitchen or home office, as you are investing in an expensive piece of equipment. While this is very much worth if you are aiming create top quality espresso it will definitely include more maintenance than a manual brew. But how do you choose which method of brewing coffee at home is right for you? In this post you’ll find information on each of the different methods of manual brewing coffee to help you get the most out of your drinking experience.

Why manual brew coffee?

If you are choosing to manually brew you have control over how you prefer your coffee to be extracted and can alter accordingly. The cost is lower if you are brewing at home and you can play around with various methods and different varieties of beans. It can become something you look forward to each day whilst also widening your knowledge

Different manual coffee brewing methods

Choosing to brew manually gives you a variety of techniques to choose from, each of which can produce drastically different drinking experiences even when the same coffee is used. Furthermore, some of these methods can be better suited to certain kinds of coffee than others so it will all be down to personal preference. For example I choose to brew African coffees through a chemex. They are known for their acidity due to the soil that they are grown in, and this method compliments the fruiter flavours that the bean produces. The water delicately flows through the coffee, bringing a cleaner and lighter tasting coffee. Microfilters at the bottom of the cylinder drain the coffee into the cup beneath. This occurs when the plunger is pushed down to force the hot water through the coffee grounds. This method is a cleaner way of making coffee, when coffee is compressed you just pop it straight into the bin and rinse the end. This makes it ideal if you are camping for example, quick and simple whilst also enjoying the luxury of freshly roasted coffee.

French Press

As with the AeroPress, a French Press, also known as a Cafetière, features a small cylindrical vessel and a plunger. The coffee grounds and hot water are added to the pot, allowed to steep, and then separated from the coffee when the plunger is pressed down. Coarse grounds are the best type used for French Press devices. As the coffee is brewed for longer it brings more depth to the cup and a thicker and richer mouthfeel.

Chemex

This pour-over device features a cone-shaped filter that allows the brewed coffee to slowly drip into the glass carafe. This shares many similarities with other pour-over methods, with the main difference being the coffee filters. Chemex coffee filters are totally unique, being thicker and more textured than other pour-over filters, this then produces a slower extraction. The chemex is a beautifully produced piece of equipment, glass with a wooden collar and tie, once the filter is removed you can decant and it looks great on a coffee table!

Siphon

Siphon coffee brewing works by using heat and pressure to brew coffee using water vapour. Once the top chamber has been filled with water that’s travelled up from the bottom chamber, the coffee grounds are added and allowed to steep. By turning the heat off for the bottom chamber, a vacuum is created which draws the brewed coffee down into the chamber ready for decanting and drinking. It brews coffee with a strong aroma and body but a clean after taste.

Cold brew coffee

If you have spare time, maybe on a weekend, using a cold brew method can produce great results. This involves steeping coffee grounds for at least 12 hours in room temperature or cool water. Cold brewing in this way produces a drastically different taste than hot brewing that has to be experienced first-hand for a proper comparison. It produces a sweeter and softer flavour profile with less acidity. This is due to brewing the coffee for longer with no heat, oxidisation occurs faster when it is brewed with heat which brings a sharper taste. Just like slow cooking meat for example, a low and slow approach definitely brings a delicate and softer taste.

Get supplies for manual brewing at home

At Pumphrey’s Coffee, we want everyone to be able to get joy out of brewing coffee through manual methods from the comfort of their own home.
